Easy Breakfast Casserole

I cooked again.. thanks to my gal pal Charlitta Rodrigues at work. She sometimes brings in this real tasty breakfast casserole that I can’t resist! She shared the recipe so that I could try to make it for Christmas morning. It was so easy.. especially for someone like myself..who doesn’t know how to cook! See for yourself and don’t forget the sour cream in the end.. it really does make it extra good!
1 role of Jimmy Dean SPICY sausage (get the spicy – b/c that’s what adds the seasoning kick!)
1 large potato (or half bag of frozen potatoes – NOT w/the red/green peppers)
6-7 eggs
3/4 bag of mild cheddar cheese
1 can of cream of mushroom
Optional: half of white onion – chopped

– brown sausage
– on medium heat… brown potatoes for about 20 mins in about 2 tsps of vegetable oil until soft. (optional: season w/salt & pepper) Don’t
be tempted to add more vegetable oil. If the potatoes stick – turn the heat down and cover with lid for about 3 mins. If that doesn’t work –
only then add oil. Too much oil will make them greasy.
– scramble eggs
-(optional) saute onions
-combine cooked sausage, potatoes and eggs (and onions) in a bowl
-add cream of mushroom
-add cheese (half of bag)
– mix well
-spread the casserole in a baking dish
-Cover casserole with 1/4 of bag of cheese
-bake for about 20 mins on 350 degrees… or until cheese is melted
-don’t spray baking dish. There’s enough oil from the sausage and cream of mushroom to be ok)
– Let cool.. and serve with a dollop of sour cream… and don’t forget the orange juice!

    I also like that but I do add the red and green peppers for color at Christmas .Also if you serve on the side Salsa and each can add a dash . Glad it turned out well ! xxoxxox

    HI! We have an even easier version of this dish we’ve made every Christmas for many years. The Tater Tots really make it! And easy clean up!

    1 Bag of Original Tater Tots
    1 lb breakfast sausage
    6 eggs
    1 cup milk (nonfat works just fine)
    1 cup shredded cheese (monterey jack or cheddar or sharp; whatever you like or have on hand)
    Salt, pepper, onion powder

    Brown and drain sausage.

    Spray 9×13 casserole with Pam. Place single layer of frozen Tater Tots in bottom of casserole pan. Layer all of the cooked sausage over the Tater tots, then layer half of the cheese. In medium bowl whisk eggs, add milk, salt, pepper, onion powder, whisk again. Pour over sausage. Sprinkle with remaining cheese. Cover with foil and refrigerate overnight. Let sit at room temp for 30 minutes before baking at 325 for 30 min covered and then 15-20 uncovered until set. YUM!
